Happy Monday! Hopefully this banana bread can help you combat your Monday blues.
I definitely love to cook but one thing I am not confident in doing is baking. However, I am good at making banana bread for some reason. There was a time when I took banana bread to an event where I didn’t know everyone and they referred to me as “banana bread girl.” So now the secret is out and you can now make it for yourself!
- 2 cups granulated sugar
- 1 cup butter, softened
- 6 bananas, very ripe, mashed
- 4 eggs, beaten
- 2½ cups flour
- 2 teaspoons baking soda
- Cream butter and sugar. Add mashed bananas and eggs. Mix well.
- Blend in sifted flour and baking soda. Do not over mix.
- Turn batter into 2 greased loaf pans. Bake at 350 degrees F for 50-60 minutes.
