This is another recipe inspired by my Hawaii trip! I love pairing this mac salad with the kalua pork I posted last week.
Mac salad is a staple item in a typical Hawaiian plate lunch (plate lunches usually consist of 2 scoops of rice, mac salad, and an entree). It’s a little more on the simple side compared to many typical American macaroni salad recipes but still tastes super good.
Mac salad is probably one of my favorite parts of plate lunches. While many places do tend to be heavy handed with the mayonnaise, this recipe is not as heavy.
- 1 pound macaroni pasta
- ½-3/4 cup onion, diced
- ½ cup carrot, diced
- 3 cups mayonnaise
- ½ teaspoon pepper
- 2 teaspoons salt
- Cook pasta in water as directed. Drain water and cool pasta.
- Rinse onion in cold running water to remove bitterness.
- Combine all remaining ingredients into pasta. Mix and chill for at least 1 hour prior to serving.
I typically use American brand mayonnaise but it tastes really good with Kewpie mayo, too.
